I scream, you scream, we all scream for BANANA NICE CREAM!!

I was shocked to realize I haven't posted a recipe for banana nice cream yet! Since today marks the halfway point between Spring Equinox and Summer Solstice (June 20th), I thought sharing a few banana nice cream recipes would be the most appropriate way to celebrate.

This recipe is entirely DAIRY-FREE and...you really only need ONE ingredient to make it – frozen bananas! Of course, I love to experiment and play with different flavors and textures, to make the nice cream a bit more fun!

Mint chocolate chip, cookie dough, berry vanilla swirl, rocky road...any and all of your childhood favorites can be made into a much healthier version that is actually HEALING for your body.

YEP. Ice cream that heals!!

Berries + Mint

Berry Vanilla Swirl

My personal favorite nice cream creation is the Berries + Mint combo, so that's what I'm going to share today! Berries + Mint Nice Cream

Ingredients:

3-4 frozen bananas

1 cup fresh berries (or frozen)

1-2 tablespoons fresh mint (if you prefer a stronger mint flavor, use 2)

Directions:

Place frozen bananas in a high speed blender or food processor with berries and mint. Blend until creamy. If using a food processor, you may need to add a bit of liquid to get this going, or simply allow the frozen bananas to thaw for 10-15 minutes before processing. Top with your favorite toppings and enjoy!!

Serves 1-2
