Raw Vegan Tabouli

The other day, I made cauliflower rice, but I wanted to do something different with it. Something new and exciting! I looked in the fridge and saw beautiful parsley, cilantro, tomatoes, spinach and cucumbers and AHA!! RAW VEGAN TABOULI!

Raw Vegan Tabouli

1 head cauliflower, riced

1 cup fresh parsley, chopped

1 cup fresh cilantro, chopped

2 cucumbers, diced

1 pint cherry or grape tomatoes, halved

1 avocado, diced

1-2 cups spinach, chopped

1/2 cup lemon juice

dulse to sprinkle on top

Directions:

Combine cauliflower rice, herbs, lemon juice and avocado in a bowl. Mash the avocado into the rice and mix until everything is well combined. Add cucumbers, tomatoes and spinach and toss. Sprinkle with dulse and more fresh herbs.

*optional: top with my homemade hummus! (recipe below)

Homemade Hummus

1-2 zucchini

1 clove garlic

1 cup sesame seeds

1-2 tablespoons lemon juice

*optional: 1/2 cup fresh oregano, cilantro, thyme, basil, dill or any of your other favorite herbs

*optional: pinch of Himalayan or sea salt

Directions:

Place all ingredients in a high speed blender and blend until creamy. Enjoy separately as a dip or on top of the tabouli!
