Coodles with Garlic Alfredo Sauce
Garlic Alfredo Sauce:
1 cup raw cashews
2 garlic cloves
2 zucchinis (small)
2-3 cups fresh parsley
3 sprigs fresh thyme
a few leaves of fresh oregano
juice of 1 lemon
1/2-1 cup water
Noodles + veggies:
2 cucumbers, spiralized
1 cup kelp noodles
1-2 cups spinach
1-2 cups lettuce
1 avocado
3 tomatoes, diced
Add noodles and veggies into a large mixing bowl. Pour sauce over the top and mix well.
